
Fish Market
The day begins with a 6.00am start to Newlyn fish market. After a tour of the harbour, discussing various fishing techniques and watching as the fishermen land and sort the catch, it’s back to the school to get cooking. The key recipe of the day will be bouillabaisse - the magical dish from Provence that so many chefs regard as the ultimate classic fish recipe.
