Poultry and Meat
So many of the producers featured here have a very old fashioned attitude to animal husbandry, and this almost always pays great dividends when it comes to flavour and texture. Many have chosen native or rare breeds of livestock, which respond well to slow, traditional rearing. The lamb and beef these listed producers rear will be largely grass fed, and the pork will generally be from free-range pigs; they are not forced to grow quickly, but allowed to develop gently at their own pace. These are the animals that develop good fat coverage, and when you factor in the proper hanging times that these producers allow their meat, the results tend to be very tasty.

Malvern Country Meals are a previous winner of the ‘National Champion of Champions’ (Meat Trade Journal Awards) for their Classic Pork sausage. Also winner of the Q Guild’s ‘Diamond’ Award for their Citrus Pork and Red Wine sausage. Meat comes from mainly local suppliers and is free range. Pork from free-range, traditional British breed pigs, with an emphasis on animal welfare. No additives, hormones or routine antibiotics are used, and cruelty-free husbandry is practised: no castration, and no teeth or tail clipping. Every pig is registered with the Rare Breeds Survival Trust. Longhorn beef, wild venison, and lamb is also available. Mail order available.

The emphasis here is on meat sourced from local farmers with whom they have built lasting relationships. The Tripe Dressers of Dewsbury

This fine food store has an array of interesting produce, from olives through fresh vegetables to chocolates, but the real star is their sweet pickled ham and bacon. Locally produced pork is pcikled in molasses and beer and then traditionally smoked.
Farmed by the Watson Smyth family for over 50 years, Padstow Farm Shop sells home grown vegetables and traditionally reared meat from their own North Devon beef cattle (Ruby Reds), Suffolkcross sheep and Tamworth and large black outdoor pigs.
