What an incredible 11 weeks of bake off! With just three bakers left in the final, we asked our head pastry chef Stuart Pate for his final thoughts on how he would end the show with an incredible show stopper.GBBO Victoria sponge larger file size

The show stopper for this week’s bake off is classic British cakes and I would keep it traditional which I think Mary Berry would really like – a three tier Victorian sponge, layered up with fresh cream and strawberries and decorated with fresh fruit and rosebuds, finished off with a light dusting of icing sugar.

My top tip for a the perfect Victorian sponge is to weigh your eggs in the shell and then weigh out the same amount of flour, sugar and butter. This will give your cake batter the perfect consistency and ensure a nice, moist bake.
