Sous Chef at Rick Stein's Fish, Falmouth

Our Sous Chef in Falmouth, James was born and bred in the area, so knows a thing or two about how special it is. He joined us in 2010 as Chef de Partie working under our now Area Chef, Fergus and latterly, Executive Chef, Luke – two great influences on his career so far. A few years on, James took the opportunity, alongside a business partner, to open his own seafood restaurant and fish and chips takeaway in Helston – North and South. After running the restaurant for a successful three years they sold up and James returned to our kitchen in Falmouth as Sous Chef.

His recommendation from the menu is the Indonesian seafood curry – without doubt one of Rick’s most popular dishes and one that he loves to cook as much as eat.

When he’s not working, James can be found testing his grip at a local climbing wall, paddleboarding along the River Fal or exploring his favourite walks around the Lizard.
