Senior Cookery School Assistant in Padstow.

Say hello to Amy our Senior Cookery School Assistant in Padstow. She’s been with the business for over 10 years, starting out as a waitress at St Petroc’s Bistro before moving over to become cookery school supervisor for seven years. Since 2015, Amy and her husband have had two sons – Jack and Sam. They keep Amy very busy, but we are very lucky to still have her in our team one day a week – the cookery school desk wouldn’t be the same without her welcoming smile.

Whilst growing up in Hertfordshire she always had jobs in the hospitality industry – but it was her passion for sport that lead her onto studying Sport and Exercise Science at University. After graduating, Amy’s love of looking after people, giving fantastic customer service and being super organised took her onto three years working for Virgin Atlantic as cabin crew – flying long haul gave her the chance to explore the world. What an experience! In 2009, having always holidayed in Cornwall as a family, her parents decided to make the move down west, and after a short while Amy followed suit as Cornwall had always felt like a home from home for her. We feel very lucky that she chose to work for us and stay for over 10 years.

Her favourite course at the cookery school is a relatively new one, Road to Mexico. The vibrant flavours and simple nature of the dishes lend themselves to relaxed dinners without stress. And when it comes to the restaurants, Amy’s top recommendation is roast fillet of monkfish with fennel and garlic – a real celebration of great quality Cornish fish, simply cooked.

Amy and her young family love getting outdoors to explore all that Cornwall has to offer, including two of the National Trust’s finest beaches, Crantock and Holywell, as well as eating at our family-friendly restaurant at Fistral. When it comes to holidays it’s down jackets and snow boots rather than flips flops and sun hats, as they often head up to Scandinavia in search of the Northern Lights.
