Join Nick and our team at Rick Stein’s Cookery School in Padstow for a two day Mexican cookery masterclass. Rick’s latest adventure documents the food and culture from San Francisco in California down to Oaxaca in Mexico, inspired by the nostalgia of a trip he made in the late 60s. On this new course you’ll discover Rick’s recipe finds and learn how to cook his favourite Mexican dishes. Expect plenty of tortillas, avocados, chilli and coriander.

Course dishes 2019

Featuring recipes from Rick’s book, The Road to Mexico.

Day one:

  • Huevos divorciados
  • Deep fried coconut prawns
  • BBQ lamb with shredded cabbage
  • Butterflied grilled bass with green and red salsas
  • DEMO – Mexican rice pudding with honeycomb

Day two:

  • Sweetcorn muffins
  • Crab and avocado omelette with chilli and coriander
  • Battered mackerel with mayonnaise, chilli and lime
  • A seafood stew with jalapeno and guajillo
  • DEMO – Beef barbacoa with chipotle, garlic and oregano

Techniques

Day one:

  • Making, pressing and cooking corn tortillas
  • Making a variety of salsas
  • Peeling, de-veining and deep-frying prawns
  • Marinating and chargrilling lamb
  • Making a slaw
  • Preparing, butterflying and grilling sea bass
  • Making honeycomb

Day two:

  • Baking muffins
  • Humanely killing, cooking and picking crab
  • Making a batter
  • Gutting, filleting and deep-frying mackerel
  • Making a fish stew
  • Preparing squid
  • Slow-cooking beef brisket
  • Making guacamole

Course overview

Arrive – 8:45am
Welcome – enjoy a tea or coffee while browsing the recipes for the day and meeting your fellow chefs
From 9am watch our chefs demo three dishes then recreate each dish in pairs at your workstation enjoying the fruits of your labour
Lunch – At our long ‘en famille’ dining table overlooking the Camel Estuary with a glass of wine or two
Afternoon demo – Time to relax with a glass of wine and watch our chef demonstrate the final dish of the day
4pm – Finish. On the second day of your course, you will be presented with a Rick Stein’s Cookery School certificate and recipe folder plus a chance to browse our shop with an exclusive voucher.
