Rissotto primavera with asparagus, courgette, broad beans, peas, mint and parsley.
Fillets of hake with an oyster, cucumber and horseradish sauce. Served with a deep-fried Porthilly oyster and pickled cucumber.
Moules marinière with cream, garlic and parsley
Fish and Shellfish Soup with Rouille, Parmesan and Croutons. Flavoured with tomato, saffron, garlic, red peppers, fennel and a pinch of cayenne.
Mackerel recheado. Mackerel stuffed with a ginger and chilli masala and served with a tomato, onion and coriander salad
Seared fillet of hake with a piperade of roasted peppers, tomato and Serrano ham. Served with minted Cornish potatoes and an olive oil and lemon sabayon.
Indonesian cod curry. Served with a grated coconut salad with crisp fried shallots, garlic and chilli and pilau rice.
