CHAR-GRILLED BEEF TACOS WITH SPRING ONIONS & GUACAMOLE

This beef taco recipe comes from Rick’s new book, The Road to Mexico. Inspired by a trip to Mercado 20 de Noviembre – a traditional food market in Oaxaca that specialises in grilling meat over hot coals.

Rick says: “You get the onions grilled along with the beef or pork, and then you sit at long white, Formica-topped tables with a pile of tortillas to make ever-varying combinations of the chewy but well-flavoured beef that tastes of fire, the guacamole, onion and chilli.”
