FILLETS OF PLAICE WITH PANCETTA AND BEURRE NOISETTE

This recipe comes from Rick’s classic book, Fruits of the Sea and features on our charity lunch menu at Rick Stein’s Fish, Falmouth next month.

Rick says: “This incredibly simple dish relies on presentation for its effect.  The fillets of fish are arranged down the centre of a nice oval serving dish, interleaved with thin slices of fried pancetta or, if you can’t get it, extremely thinly sliced bacon.”
