Rick says: “I used to frown on such flavour-smothering dishes as this cheese-and mustard-flavoured lobster thermidor, in spite of the fact that customers consistently ordered it over the years. But now I’ve mellowed, and made the dish far lighter than it ever was in the sixties, with only a thin film of well-reduced sauce and very little cheese. It’s now incredibly popular in the restaurant once again.”
