250g salmon fillet 2 passion fruit Juice of 1/2 a lime 1 tbs sunflower oil 1/2 a medium-hot chilli, finely chopped 1/4 tsp caster sugar Small handful coriander, chopped 1⁄2 teaspoon salt and freshly ground black pepper
Slice the salmon 5mm thick. Lay out on a serving plate. Shortly before serving, make the dressing. Cut the passion fruit in half and scoop the pulp into a bowl. Stir in the lime juice, sunflower oil, chilli, sugar, coriander, salt and pepper then spoon the dressing over the fish. Leave for 10 minutes before serving.
