Mussels with poulette sauce
Our recipe of the month, mussels with poulette sauce, comes from Rick’s latest culinary meander, Secret France. Simple to make, it’s the perfect dish to enjoy for lunch with a few hunks of bread to soak up the beautifully creamy sauce. You can also try it on our charity lunch menu at The Seafood Restaurant whilst supporting Cornwall Air Ambulance – available every day for lunch from 20th January to 13th February. More on this below.
Rick says: “I enthusiastically ordered this dish at a hotel with a view right across the bay to the town of Le Crotoy. What could be a better lunch, I thought, except that the mussels were not at all great; a bit smelly, in fact. So, to restore the pleasant thoughts of sweet mussels and the cream, butter and cider of the area, here’s a recipe complete with chicken stock and a few bacon lardons for good measure.”
