Sri Lankan cashew nut curry

Our recipe of the month, Sri Lankan cashew nut curry, hails from Rick’s 2009 Far Eastern Odyssey. A fab vegan option on the menu at Winchester, Barnes and Fistral that celebrates the humble cashew nut – swapping out meat or fish from the curry to make it perfect for all. Try making it at home for your next curry night.

Rick says: “A lovely vegetable curry, vegan as well. I like cashew nut curries that also have a vegetable in them. This recipe was originally snake beans, but sometimes they’re hard to get so I’ve used green beans instead.”
